  • 2 cups (450ml) purified water
  • 1 cup (225g) sugar
  • 1/2 cup (115ml) club soda (per glass)
  • A few drops of lime juice
  • Lime slices (for garnish)


  1. In a saucepan boil 2 cups of water.
  2. Add the ginger (peeled and chopped finely).
  3. Reducing the heat to medium-low, leave the ginger simmer for 5 minutes.
  4. Remove from the heat and leave for 20 minutes.
  5. Strain the liquid through a fine mesh strainer. Remove the ginger pieces.
  6. In a separate saucepan, make the simple syrup.
  7. Dissolve 1 cup of sugar into 1 cup of boiling water.
  8. Mix 1/2 cup of ginger water with 1/3 cup of the simple syrup and 1/2 cup of club soda.
  9. Add some raw organic honey to sweeten the taste.
  10. Add some lime juice to taste.
